Probably the most well known trap is a wooded snap trap.
The rats will eat the powder but the potato flakes will swell up in the intestines of the rodents killing them eventually.
The rodents will come out at night to feed and the closer to their holes the food is the more likely they are to be caught.
Also note any holes in the wall and roof.
